Bikini Recipe

Yields 10 servings

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Place the listed components inside a pot, bring to a light boil, mixing to dissolve. Next, remove from the stove and leave to reach room temperature entirely. Pour into an sealable bottle, cap it and store chilled, where it will keep for up to a month.

For the Premix: Pour all the spirits and syrup in a sizeable container, let it rest for an hour, then strain preferably using a fine cloth, so it's fully clarified.

To serve: Add 85ml from the cocktail base into your cocktail shaker filled with ice, and stir gently for about 60 seconds to chill. Strain into an chilled martini glass or equivalent, decorate with some cranberries and complete it using a quick spritz with the mandarin essence over the drink.
